The menu

Our chefs Marino and Fabiana, from Salento, who have decades of experience cooking for many high-end palazzos, are passionate about traditional Cucina Salentina. Their menus, which include using our homegrown citrus fruit, pomegranates, and fresh herbs, are full of locally sourced, seasonal ingredients, to which they add their own twists to create new takes on classic Pugliese cooking.

The rooftop

The castle’s rooftop terrace is the perfect spot to gaze at the glory of a Southern Pugliese sunset. Guests are invited to sip cocktails, sample local wines and Prosecco whilst taking in the spectacular 360-degree vistas. Our team is on hand to serve rooftop aperitif under the stars whilst you enjoy the gentle background music played on our Sonance bespoke sound system, we can even provide you with a live string quartet, as you wish.
